Decadent baked fettuccine lasagna with savory beef, sweet peppers, and melted cheese.
Ingredients:
  • 12 ounces dry fettuccine pasta
  • 1 pound lean ground beef
  • 1 tablespoon butter
  • 1 cup chopped onion
  • 1 cup red bell pepper, chopped
  • 1 (29 ounce) can diced tomatoes
  • 1 (4 ounce) can sliced mushrooms
  • 3 tablespoons chopped black olives
  • 2 teaspoons dried oregano
  • 1 cup shredded mozzarella cheese
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 0.25 cup beef broth
  • 0.25 cup grated Parmesan cheese
Instructions:
  • Boil a pot of salted water. Cook pasta until al dente, about 8-10 minutes. Drain pasta.
  • Start by searing the beef in a spacious skillet until golden. Remove excess fat, then transfer the beef to a bowl. In the same skillet, melt butter and sauté onion and bell pepper until soft. Add tomatoes, mushrooms, olives, and the beef. Season with oregano and let it simmer for 10 minutes.
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and grease a 9x13-inch baking dish.
  • Layer half of the cooked fettuccine in the dish, followed by half of the beef and vegetable mixture. Sprinkle with 1/2 cup each of Cheddar and mozzarella cheese. Repeat layers.
  • Combine the condensed soup and beef broth until creamy. Drizzle over the casserole and generously sprinkle with Parmesan cheese.
  • Bake in the preheated oven for 30-35 minutes until heated through.
