Transform fish fillets and frozen veggies into a quick, delicious family dinner in 45 minutes with this easy recipe.
Ingredients:
  • 3 cups frozen California-blend vegetables (broccoli, carrot, cauliflower)
  • 0.5 cup water
  • 1 stalk celery, chopped
  • 0.5 medium onion, diced
  • 1 clove garlic, minced
  • 1 pinch paprika, or to taste
  • 1 pound cod fillets
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and lightly grease a 2-quart baking dish with olive oil.
  • In the prepared baking dish, mix together mixed vegetables, water, celery, onion, and garlic. Season generously with paprika, salt, and pepper.
  • Season cod fillets with a delicate touch and place them elegantly on a bed of vegetables.
  • Place the dish in the preheated oven and immediately lower the temperature to 350 degrees F (175 degrees C). Bake until the fish easily flakes with a fork, approximately 30 minutes.
