Indulgent goat cheese pairs perfectly with sweet figs in this gourmet salad.
Ingredients:
  • 1 x 40cm baguette (French breadstick), diagonally cut into 5mm-thick slices
  • 2 x 150g pkts goat's cheese (South Cape brand)
  • 80ml (1/3 cup) extra virgin olive oil
  • 2 tsp finely chopped fresh thyme
  • 2 tsp finely grated lemon rind
  • 2 x 180g pkts mixed salad leaves
  • 8 fresh figs, cut into wedges Dressing
  • 160ml (2/3 cup) extra virgin olive oil
  • 42.00 gm fresh lemon juice
  • 23.40 gm wholegrain mustard
  • 14.40 gm yellowbox honey
  • Salt & freshly ground black pepper
Instructions:
  • 1. Preheat your oven to 200°C. Lay out the baguette slices in a single layer on a baking tray. Bake for about 5 minutes until they turn light brown. 2. Evenly spread goat's cheese on the baguette slices. 3. In a small bowl, mix together oil, garlic, thyme, and lemon rind. Drizzle this mixture evenly over the goat's cheese.
  • Continue baking in the oven until the dish is beautifully golden brown and fully heated through. Then, take it out of the oven.
  • In a small bowl, mix together the oil, lemon juice, mustard, and honey. Season with salt and pepper to taste.
  • In a spacious bowl, arrange the salad leaves. Drizzle generously with dressing and mix gently to fully coat. Distribute the dressed salad leaves among individual serving plates. Top with fresh figs and savory goat's cheese toast, then serve promptly.
