The ultimate spring quiche

Spring produce with goat's cheese and crispy bacon - an incredible combination of flavors!
Ingredients:
  • sea salt
  • freshly ground black pepper
  • 150 g asparagus
  • 100 g fresh peas and broad beans podded
  • 75 g baby spinach
  • 2 spring onions
  • 4 rashers higher-welfare smoked streaky bacon optional
  • 4 large free-range eggs
  • 150 ml double cream
  • 150 ml semi-skimmed milk
  • ½ a bunch of fresh chives
  • 75 g goat's cheese
  • 300 g plain flour plus extra for dusting
  • 150 g unsalted butter at room temperature, cubed
Instructions:
  • For the pastry, sift flour and a pinch of salt into a bowl. Rub in butter until mixture resembles fine breadcrumbs. Gradually add 125ml cold water, mix until a rough dough forms. Add more water if needed. Shape dough, wrap in clingfilm, and chill for 30 minutes. Preheat oven to 180ºC/350ºF/gas 4. Trim asparagus, then blanch with peas and beans for 1 minute. Drain and mix with spinach, then refresh in cold water. Drain well and place in a bowl with sliced spring onions. Fry bacon until golden. Whisk eggs with cream, milk, salt, pepper, and chives. Roll out dough and line a tart tin. Blind bake for 12 minutes, remove weights, and bake for 8-10 minutes more. Fill tart with greens, top with bacon, pour in egg mixture, and crumble goat cheese over the top. Bake for 35-40 minutes until set. Serve with a green salad.
