Grand Marnier chocolate truffles

Indulge in luxurious Grand Marnier chocolate truffles - the ultimate gourmet gift.
Ingredients:
  • 1 orange
  • 20.00 gm caster sugar
  • 20.00 gm water
  • 1 x 200g milk chocolate, coarsely chopped
  • 40.40 gm thickened cream
  • 20.00 ml Grand Marnier
  • 1/4 tsp finely grated orange rind
  • 200g dark choc melts
Instructions:
  • Zest the orange to remove the rind, or alternatively, peel the rind using a vegetable peeler and slice it thinly after removing the white pith. Line a baking tray with non-stick baking paper. In a small frying pan over low heat, mix the orange rind, sugar, and water until the sugar dissolves. Bring the mixture to a boil over medium heat. Stir occasionally and cook for 2-3 minutes until the rind is translucent. Transfer the candied rind to the lined tray using a fork.
  • In a heatproof bowl, combine milk chocolate, cream, Grand Marnier, and orange rind. Set the bowl over a saucepan with simmering water (ensure bowl doesn't touch the water). Stir with a metal spoon until chocolate melts and mixture is smooth. Take off heat, cover with plastic wrap, chill in the fridge for 1 hour until firm to roll into balls.
  • Prepare a tray lined with non-stick baking paper. Scoop out 1 1/2 teaspoons of the chocolate mixture using a teaspoon, roll into a ball with your hands, and place it on the tray. Repeat for the rest of the mixture. Chill in the fridge for 30 minutes until firm.
  • Melt dark chocolate in a heatproof bowl placed over simmering water, ensuring the bowl doesn't touch the water. Stir with a metal spoon for 5 minutes until smooth. Remove from heat.
  • Prepare a baking tray with non-stick paper. Use a fork to coat a truffle evenly in melted chocolate. Shake off excess chocolate by tapping the fork gently, then place the truffle on the tray. Top with candied rind. Repeat for all truffles and rind, then let them set for 30 minutes.
