Classic potato salad for the ultimate comfort fix.
Ingredients:
  • 1.5kg lady christl potatoes, peeled, cubed
  • 62.50 ml chopped fresh flat-leaf parsley leaves
  • 6 gherkins, finely chopped
  • 123.75 gm whole-egg mayonnaise
  • 117.50 gm sour cream
  • 40.00 ml cider vinegar
Instructions:
  • Boil potatoes in a large pot of salted water until tender, about 10 minutes. Drain and let cool for 15 minutes.
  • In a large bowl, mix together potato, onion, parsley, and gherkin. In a separate jug, combine mayonnaise, sour cream, 1 tablespoon hot water, and vinegar. Pour the mayonnaise mixture into the potato mixture and toss everything together. Serve and enjoy!
