Revamp potato salad with light mayo, extra celery, and no egg yolks for a healthier twist on a classic dish.
Ingredients:
  • 5 potatoes
  • 3 eggs
  • 1.5 cups chopped celery
  • 0.5 cup chopped onion
  • 0.5 cup sweet pickle relish
  • 0.25 cup low-fat mayonnaise
  • 1 tablespoon prepared mustard
  • 0.25 teaspoon celery seed
  • 1 clove garlic, minced
  • ground black pepper to taste
Instructions:
  • In a large pot, cover the potatoes with salted water and bring to a boil. Simmer on medium-low heat until tender, about 20 minutes. Drain, cool, peel, and chop.
  • As the potatoes cook, gently place the eggs in a saucepan and cover with water. Boil, then set aside for 15 minutes. Cool the eggs under cold water and peel. Chop the egg whites; either discard the yolks or store for later.
  • In a large bowl, mix potatoes, egg whites, celery, onion, relish, mayonnaise, mustard, celery seed, garlic, and pepper until well combined. Refrigerate until chilled.
