Bran muffins with yogurt, applesauce, and plump raisins for natural sweetness. No buttermilk or shortening needed!
Ingredients:
  • 2.5 cups wheat bran
  • 1.5 cups sifted all-purpose flour
  • 1.5 teaspoons baking soda
  • 2 eggs
  • 1.5 cups nonfat plain yogurt
  • 0.5 cup white sugar
  • 0.25 cup molasses
  • 2.5 tablespoons unsweetened applesauce
  • 0.5 cup chopped raisins
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a muffin tin by greasing it or lining it with paper liners.
  • In a bowl, combine wheat bran, flour, baking soda, and salt. In another bowl, whisk together eggs. Add yogurt, sugar, molasses, and applesauce to the eggs; whisk until smooth. Stir in bran mixture and chopped raisins until no dry lumps remain. Spoon batter into muffin cups and bake.
  • Bake the muffins in the preheated oven for around 20 minutes until a toothpick inserted into the center comes out clean. Allow them to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
