Crispy Parmesan asparagus fries: A delicious and healthier twist on classic appetizers.
Ingredients:
  • 2 cups all-purpose flour
  • 2 tablespoons ground paprika
  • 2 tablespoons garlic powder
  • 1 tablespoon baking powder
  • 1 tablespoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • 2 cups Italian-seasoned bread crumbs
  • 0.5 cup grated Parmesan cheese
  • 1 bunch fresh asparagus, trimmed
  • 1 cup peanut oil for frying, or as needed
Instructions:
  • Combine flour, paprika, garlic powder, baking powder, and salt in one bowl. In another bowl, mix together eggs and buttermilk. In a third bowl, toss bread crumbs with Parmesan cheese.
  • Coat each asparagus stalk in the flour blend, dip in the egg mixture, then coat in bread crumbs. Refrigerate for 30 minutes to ensure the breading sticks well when frying.
  • Bring the oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Sear asparagus in hot oil in batches until the breading is golden brown, for approximately 4 minutes. Place on paper towels to absorb excess oil. Serve immediately.
