Indulgent Cacio e Pepe Fried Chicken Wings coated in zesty Parmesan and cracked pepper. Perfect for solo snacking or pairing with your go-to dip!
Ingredients:
  • Canola, vegetable, or peanut oil, for frying
  • 3 pounds chicken wing sections, drumettes and flats
  • 1 tablespoon ground black pepper
  • 2 teaspoons kosher salt
  • 3/4 teaspoon garlic powder
  • 3/4 cup freshly grated Parmesan cheese
  • 6 tablespoons unsalted butter
  • Chopped fresh parsley, for serving (optional)
  • Ranch or blue cheese dressing, for serving
Instructions:
  • Begin by adding a generous amount of oil to a cast iron or heavy-bottomed skillet. Heat the oil over medium heat until it reaches 350°F.
  • Prepare the chicken wings: Pat them dry with paper towels, season with salt, garlic powder, and 1 teaspoon of ground black pepper. Fry the wings in batches in a skillet until they are golden all over, about 15 minutes per batch. Transfer the wings to a wire rack on a baking sheet to drain. Repeat with the remaining wings.
  • Infuse flavor into the wings: Melt the butter in a microwave-safe bowl in 30-second bursts. Mix in the fried chicken wings, 1/2 cup Parmesan cheese, and the remaining 2 teaspoons black pepper until wings are fully coated.
  • Present and enjoy: Place the wings on a serving platter, sprinkle with the rest of the Parmesan cheese (add more for extra cheesiness if desired), garnish with chopped parsley (if preferred), and serve alongside your favorite dipping sauce.
