Creamy cannellini beans and sweet peas simmered with Parmesan cheese, a protein-packed Italian side dish.
Ingredients:
  • 1 (15 ounce) can sweet peas, partially drained
  • 1 (15 ounce) can cannellini beans, undrained
  • 2 tablespoons butter
  • 0.75 cup grated Parmesan cheese
  • 2 teaspoons freshly ground black pepper, or more to taste
Instructions:
  • In a saucepan, combine sweet peas and cannellini beans, stirring over medium-high heat until warmed through and 1/3 of the liquid has evaporated, around 10 minutes. Then, mix in butter until melted, for 2 to 3 minutes. Lower the heat to medium.
  • Blend in the Parmesan cheese and black pepper into the pea mixture. Simmer and stir occasionally until the mixture turns creamy and thickens, for about 5 to 10 minutes.
