Stuffed olives in parmesan crumbs

Upgrade your starter game with breaded and fried green olives.
Ingredients:
  • 300g olive
  • 75g (1/2 cup) semi-dried tomatoes, cut into strips
  • 75g (1/2 cup) plain flour
  • 3 eggs, lightly beaten
  • 1 clove garlic, crushed
  • 70g (1 cup) panko (Japanese) breadcrumbs
  • 60g (3/4 cup) parmesan
  • Vegetable oil, to deep-fry
Instructions:
  • Take out the pits from the olives and fill them with strips of tomato. Next, place flour in one bowl, mix eggs and garlic in another bowl, and combine breadcrumbs and parmesan in a third bowl. Dust the olives with flour, removing any extra, then dip them in the egg mixture and coat them with breadcrumbs. Heat oil in a small saucepan on medium heat until it reaches 180C. Fry the olives in 2 batches for about 2 minutes each until they turn golden brown. Once done, drain them on paper towels and season with salt before serving.
