Elevate your potato salad with a zesty homemade dressing.
Ingredients:
  • 6 medium potatoes, peeled (2 pounds)
  • 1 1/2 cups mayonnaise or salad dressing
  • 1 tablespoon white or cider vinegar
  • 1 tablespoon yellow mustard
  • 1/4 teaspoon pepper
  • 1 medium onion, chopped (1/2 cup)
  • 2 medium celery stalks, chopped (1 cup)
  • 4 hard-cooked eggs, chopped
Instructions:
  • Boil salted water in a 3-quart saucepan. Add potatoes, cover, and simmer until tender (30-35 minutes). Drain, cool slightly, then cube.
  • In a big glass or plastic bowl, combine mayonnaise, vinegar, mustard, salt, and pepper. Add potatoes, celery, and onions; mix well. Gently fold in the eggs. Cover and refrigerate for a minimum of 4 hours until cold.
