Good old chicken tikka masala

Quick and flavorful chicken tikka masala made with marinated spices.
Ingredients:
  • olive oil
  • 6 cloves of garlic
  • 7.5 cm fresh ginger
  • 2-3 fresh red chillies
  • 2 medium onions
  • 1 tablespoon mustard seeds
  • 1 tablespoon paprika
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 3 tablespoons garam masala
  • 200 ml natural yoghurt
  • 4 x 120 g free-range chicken breasts skin off
  • 1 tablespoon unsalted butter
  • 2 tablespoons tomato purée
  • 1 small handful of ground cashew nuts or almonds
  • 50 ml single cream
  • 1 bunch of fresh coriander
  • 1-2 limes
Instructions:
  • Peel and finely grate the garlic and ginger, deseed and finely chop the chillies, then combine in a bowl. Slice the onions. Heat oil in a large pan, add mustard seeds, let them pop, and mix with ginger, garlic, paprika, cumin, coriander, and 2 tablespoons of garam masala. Transfer half to a clean bowl with yoghurt. Chop and mix in the chicken, marinate for at least 30 minutes. Melt butter in the pan, add onions and spice mix, cook for 15 minutes until soft and fragrant. Stir in tomato purée, nuts, water, salt, simmer until slightly thickened, then remove from heat. Sear marinated chicken until golden and cooked through. Warm the sauce, add cream, garam masala, adjust seasoning, and add grilled chicken. Top with coriander leaves, lime juice. Serve with basmati rice, poppadoms, and a cold beer. Enjoy!
