Ingredients:
  • 4 handfuls French beans stalk ends removed
  • 2-3 heaped teaspoons French mustard to taste
  • 2 tablespoons good-quality white wine vinegar
  • 4 tablespoons extra virgin olive oil
  • sea salt
  • freshly ground black pepper
  • 1 medium shallot peeled and finely chopped
  • 1 tablespoon capers optional
  • ½ clove garlic finely grated
  • 1 small handful fresh chervil optional
Instructions:
  • - Bring a pan of water to a rapid boil and add the beans. Cover with a lid and cook for 4 to 5 minutes. Quick boiling helps the beans retain their nutrients. - While the beans are cooking, mix mustard and vinegar in a jar or bowl. Gradually whisk in olive oil to create a flavorful French dressing. Season with sea salt and pepper, then add shallot, capers (if desired), and garlic. - Test a bean for doneness - it should be tender yet hold its shape. Drain the beans in a colander while still hot. - Dress the warm beans with the prepared dressing to allow them to absorb maximum flavor. Serve warm, not cold, for the best taste. Optionally garnish with chervil for extra flavor and crunch. Enjoy the beans as a standalone salad or a side dish.
