Classic hearty chilli con carne recipe - unbeatable deliciousness!
Ingredients:
  • 2 medium carrots
  • 2 medium onions
  • 2 cloves garlic
  • 2 sticks celery
  • 2 red peppers
  • olive oil
  • 1 heaped teaspoon chilli powder
  • 1 heaped teaspoon ground cumin
  • 1 heaped teaspoon ground cinnamon
  • 1 x 400 g tin of chickpeas
  • 1 x 400 g tin of red kidney beans
  • 2 x 400 g tin of chopped tomatoes
  • 500 g quality minced beef
  • ½ a bunch of fresh coriander (15g)
  • 2 tablespoons balsamic vinegar
Instructions:
  • Finely chop onions, garlic, carrots, and celery along with halved red peppers after removing stalks and seeds. Heat 2 tablespoons of oil in a large casserole pan over medium-high heat. Add chopped vegetables, chili powder, cumin, cinnamon, sea salt, and black pepper. Cook for 7 minutes until softened. Add drained chickpeas, kidney beans, tomatoes, and water from 1 tin. Add minced beef, coriander stalks, and balsamic vinegar. Season with salt and pepper. Bring to a boil, then simmer for 1 hour until thickened. Serve with rice, bread, or potato, along with yoghurt, guacamole, and lime. Garnish with coriander and chili. Enjoy!
