Classic bread and butter pudding with a zesty twist of marmalade.
Ingredients:
  • 100 g unsalted butter softened
  • 1 large pinch ground nutmeg
  • 1 large pinch ground cinnamon
  • 1 large orange zest of
  • 8 x 1 cm slices good-quality bread
  • 9 large free-range eggs
  • 140 g caster sugar
  • 500 ml semi-skimmed milk
  • 565 ml single cream
  • 1 vanilla pod scored lengthways and seeds removed
  • 4 tablespoons good-quality fine-cut marmalade
Instructions:
  • Preheat the oven to 180ºC/350ºF/gas 4. Mix butter with nutmeg, cinnamon, and orange zest to make flavored butter. Use a bit to grease a medium-sized shallow, ovenproof dish. Spread flavored butter on bread, then cut each slice in half diagonally. Arrange slices in the greased dish. Separate eggs, keeping 9 yolks and 1 white. Whisk egg yolks and white with sugar. Heat milk and cream with vanilla in a saucepan. Combine with eggs, remove vanilla pod, and pour over bread to soak for 20 minutes. Place dish in a roasting tray and add boiling water halfway up the dish. Bake for around 45 minutes until custard is set. Warm marmalade in a saucepan, brush over bread, and bake for another 5 to 10 minutes. Cool slightly before serving.
