Savory millet and quinoa bake with veggies, perfect side for any meal.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 3 stalks celery, chopped
  • 0.5 cup chopped bell pepper
  • 0.5 cup corn kernels
  • 0.75 cup millet
  • 0.75 cup quinoa
  • 3 cups low-sodium chicken stock
Instructions:
  • Preheat your oven to 350°F (175°C) to get it nice and warm for your culinary creation.
  • In a skillet over medium heat, sauté onion, celery, bell pepper, and corn in oil until softened, for about 10 minutes.
  • Combine the flavorful onion mixture, nutritious millet, protein-packed quinoa, and a pinch of salt in an 8x8-inch casserole dish. Pour in the savory chicken stock and cover the dish with aluminum foil for optimum flavor infusion.
  • Simply bake until grains are tender and have absorbed all the liquid, approximately 30 minutes in the preheated oven.
