Baked herb ricotta with prosciutto pears

Indulge in gourmet baked ricotta with prosciutto-wrapped pears for a truly special treat.
Ingredients:
  • 750g ricotta
  • 62.50 ml finely chopped parsley
  • 20.00 ml finely chopped chives
  • Salt and black pepper
  • 2 pears
  • 8 slices prosciutto, halved lengthways
  • 18.20 gm extra virgin olive oil
  • Crusty bread, to serve
Instructions:
  • Preheat your oven to 180°C. Line an 18cm cake tin or ovenproof dish with baking paper. In a large bowl, combine ricotta with egg, parsley, and chives. Season generously with salt and black pepper. Transfer the mixture to the prepared tin and press down firmly using the back of a spoon. Bake for 1 hour until golden. Allow it to cool in the pan before turning it out onto a serving platter.
  • Peel, core, and cut each pear into 8 wedges. Wrap a slice of prosciutto around each pear wedge and drizzle extra virgin olive oil over ricotta. Serve with pears and slices of crusty bread.
