Make crispy sweet potato chips for a satisfying after-school snack for your kids.
Ingredients:
  • 2 medium sweet potatoes, scrubbed and sliced 1/8 inch thick using a mandoline, box grater, or knife
  • 1 tablespoon extra-virgin olive oil, or as needed
  • 2 teaspoons coarse salt
Instructions:
  • Preheat the oven to a toasty 450 degrees F (230 degrees C), and cover two 10x15-inch baking sheets in aluminum foil.
  • Arrange sweet potato slices in a single layer on the baking sheets. Brush each slice on both sides with oil.
  • Bake in the preheated oven for 13 to 14 minutes until edges are golden brown. Remove chips with crispy edges as they brown, continuing to bake the remaining chips and checking frequently.
  • Season with a pinch of salt and present in a charming basket.
