Baked Italian Chicken Breast with Brie

Bake chicken in white wine with prosciutto and Brie for a romantic Italian dinner.
Ingredients:
  • 0.75 cup dry white wine
  • 2 tablespoons dried oregano
  • 2 teaspoons ground black pepper
  • 2 large skinless, boneless chicken breast halves
  • 2 roma tomatoes, chopped
  • 2 large mushrooms, sliced
  • 1 clove garlic, chopped
  • 0.25 cup grated Parmesan cheese, divided
  • 2 slices prosciutto
  • 4 ounces Brie cheese, cut into 1/4-inch slices
Instructions:
  • Preheat the oven to 400°F (200°C) for the perfect cooking temperature.
  • Combine white wine and water in a 9x13-inch baking dish.
  • Combine oregano, black pepper, and salt in a bowl. Rub the mixture onto both sides of the chicken breasts. Place the seasoned chicken in a baking dish and sprinkle with red pepper flakes.
  • Bake chicken in a preheated oven for 25 minutes, then add tomatoes, mushrooms, and garlic around the chicken. Sprinkle 2 tablespoons of Parmesan cheese over everything. Bake for an additional 15 minutes or until chicken is fully cooked and reads 165°F (74°C) on a thermometer.
  • Sprinkle the remaining 2 tablespoons of Parmesan cheese over the chicken, then layer each chicken breast with 1 slice of prosciutto and 2 to 3 slices of Brie cheese diagonally on top of the prosciutto.
  • Bake until the Brie cheese is gooey and melted, for 5 to 10 minutes.
