Zesty zucchini sticks: coated in Parmesan, Italian herbs, panko crumbs, and baked to crispy perfection as a tasty and healthier fry alternative.
Ingredients:
  • 3 small zucchini, cut into french-fry shaped pieces
  • 2 large eggs, beaten
  • 1 cup panko bread crumbs
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons Italian seasoning
Instructions:
  • Preheat the oven to 425°F (220°C) and prepare a baking sheet lined with aluminum foil.
  • Sprinkle zucchini with a touch of salt and let it rest.
  • In a shallow bowl, gently pour the beaten eggs. In another shallow bowl, combine bread crumbs, Parmesan cheese, and Italian seasoning.
  • Coat zucchini in beaten eggs, then cover thoroughly with bread crumbs. Lightly shake off any extra crumbs by gently tossing them between your hands. Place the coated zucchini in a single layer on the baking sheet.
  • Place the zucchini in the preheated oven and bake until it turns a beautiful golden brown, which should take around 15 minutes.
