Baked Pears with Wine and Walnut Cream

Baked pears in sweet wine sauce topped with creamy walnuts, a decadent holiday dessert.
Ingredients:
  • 4 pears, peeled
  • 10 fluid ounces red wine, or more to taste
  • 0.5 cup dark brown sugar, packed
  • 1 vanilla bean, split and seeds scraped out and reserved
  • 1 orange, peeled and juiced (peel reserved)
  • 7 ounces shelled walnuts, divided
  • 0.5 cup heavy whipping cream
  • 0.5 cup sour cream
  • 1 orange, zested and juiced
  • 2 teaspoons dark brown sugar, or as needed
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Place pears in a snug oven-proof pan with a secure lid. Pour in red wine, 1/2 cup of brown sugar, a vanilla bean and its seeds, and the zest and juice of 1 orange. Bring the mixture to a boil, then sprinkle half of the walnuts on top.
  • Bake the pear mixture in the preheated oven for 20 to 30 minutes until the pears are tender, remembering to baste them with red wine syrup every 10 minutes. Once done, allow to cool and then strain out the vanilla bean and orange peel from the red wine syrup.
  • Spread the remaining walnuts evenly on a baking sheet and bake in the preheated oven for 5 minutes, until they are toasted and fragrant.
  • Combine toasted walnuts and red wine syrup in a food processor; pulse until a paste forms. Transfer to a bowl and whisk in cream, sour cream, orange zest and juice, and brown sugar until smooth.
  • Drizzle the luscious walnut-cream sauce over the succulent baked pears.
