Hot baked fruits with butterscotch cream

Bake apples, figs, and pears for a delicious dessert. Pair with grilled panettone for a flavorful treat.
Ingredients:
  • 4 small red-skinned apples
  • 2 ripe pears
  • 1 small lemon, halved
  • 40g unsalted butter
  • 40.00 ml light muscovado sugar
  • 200ml white wine or water
  • 2 firm figs, halved
  • 2 mandarins or small oranges, halved
  • 100g blueberries
  • 200g thick Greek-style yoghurt
  • 1 heaped tbsp light muscovado sugar (see Notes)
Instructions:
  • Preheat your oven to 180°C and gently grease a large baking tray.
  • Make a vertical slit in the skin of each apple from top to bottom. Cut the pears in half, use a melon baller to remove the cores, and gently rub them with lemon.
  • Place the pears and apples elegantly in a roasting pan. Dot them with butter, sprinkle with sugar, and drizzle with wine or water. Bake for 35 minutes until golden and tender.
  • Place succulent figs and vibrant mandarins or oranges on the tray, then continue baking for an additional 10 minutes or until the mandarins have just softened.
  • Prepare the cream by placing yoghurt in a shallow bowl and sprinkling with sugar. Let it sit for 15 minutes to dissolve the sugar before gently swirling together.
  • Divide the baked fruit onto plates or bowls using a slotted spoon. Sprinkle with blueberries and pour the warm juices from the roasting pan. Top each with a dollop of butterscotch cream and serve with a drizzle of the juices.
