Elevate your dessert game with a simple air-fryer treat using hot cross buns for a delicious shortcut version full of flavor and texture.
Ingredients:
  • 2 large free-range eggs
  • 100 g caster sugar
  • 1 hot cross bun
  • 4 tablespoons sherry or elderflower cordial
  • 2 tablespoons hazelnut chocolate spread
  • 1 x 415 g tin of peaches in juice
  • 2 large scoops of vanilla ice cream
  • 1 handful of unsalted hazelnuts
Instructions:
  • Separate the eggs and place the whites in a bowl. Add a pinch of sea salt and whisk until stiff peaks form using an electric whisk, if available. Gradually add the sugar while continuing to whisk until glossy. Halve the hot cross bun and place on circles of greaseproof paper. Drizzle sherry over the cut sides of the buns, spread chocolate spread, drain peaches, and place half on each bun. Top one bun with ice cream, then add half the meringue, ensuring complete coverage. Finish with decorative peaks using a spoon. Transfer to the larger drawer of the air fryer along with half the hazelnuts in the smaller drawer. Cook at 190°C for 5 minutes until meringue is golden. Let sit for 1-2 minutes to crisp up, then slice, sprinkle with hazelnuts, and serve. Repeat the above steps to make the second Alaska. Enjoy!
