Try these simple baked porcupine meatballs for a quick and delicious dinner with easy cleanup - a family favorite with a twist!
Ingredients:
  • 700ml bottle passata
  • 400ml Beef Style Liquid Stock
  • 20.00 ml balsamic vinegar
  • 1kg lean beef mince
  • 150.00 gm long-grain rice
  • 128.75 gm milk
  • 1 egg
  • 1 small onion, grated
  • 2 tsp Italian herbs
  • 5.00 gm Tuscan seasoning
  • 62.50 ml flat leaf parsley, finely chopped, to serve
Instructions:
  • Preheat your oven to 180C (160C fan-forced).
  • In a large 3.5L baking dish, combine passata, stock, and vinegar. Mix well and season with salt and pepper to taste.
  • Mix together the mince, rice, milk, egg, onion, herbs, and seasoning in a bowl. Shape into balls using 1/2 cup of the mixture for each ball, then place them into the sauce.
  • Bake the meatballs covered for 1 hour or until they are cooked through. Let them stand covered for 10 to 15 minutes before serving, sprinkled with parsley.
