Ingredients:
  • 4 baking potatoes
  • 300 g celeriac
  • 1 bulb of garlic
  • 4 tablespoons olive oil
  • 3 sprigs of fresh thyme
Instructions:
  • 1. Preheat the oven to 190ºC/gas 5. 2. Wash the potatoes, rub with sea salt, prick with a fork, and place on one side of a baking tray. Bake for 30 minutes. 3. Cut the celeriac into large chunks, separate garlic cloves, and place on a piece of baking parchment. Sprinkle with sea salt and black pepper. Drizzle with 2 tablespoons of olive oil, toss to coat, and wrap into a loose parcel. 4. After 30 minutes, add the celeriac parcel to the tray. Bake for an additional 20-30 minutes, until soft. 5. Scoop the potato flesh, squeeze out the garlic flesh, mash with celeriac, thyme leaves, and remaining oil. Season to taste and serve.
