Baked Potato-Smoked Chicken Casserole

Elevate chicken casserole with roasted red potatoes and tangy barbecue sauce.
Ingredients:
  • 7 cups cubed red potatoes (about 2 1/2 lb)
  • 3 tablespoons olive oil
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 1 lb pulled smoked chicken
  • 3/4 cup barbecue sauce
  • 8 slices bacon, crisply cooked, crumbled
  • 2 cups shredded sharp Cheddar cheese (8 oz)
  • 1 1/2 cups sour cream
  • 1/2 cup chopped green onions
  • Red pepper sauce, if desired
Instructions:
  • Preheat oven to 400°F. Thoroughly coat a 13x9-inch (3-quart) glass baking dish with cooking spray.
  • Combine potatoes, oil, salt, and pepper in a large bowl and mix well. Transfer the mixture to a baking dish and bake uncovered for 40 minutes, stirring halfway through, until the potatoes are tender on the inside and crispy on the outside.
  • Combine the chicken with the flavorful barbecue sauce in a medium bowl. Spoon this delicious mixture over the baked potatoes, and then generously sprinkle with crispy bacon and gooey cheese. Bake for 12 minutes, or until the chicken is heated through and the cheese is perfectly melted.
  • Drizzle each serving with sour cream, sprinkle with onions, and serve with pepper sauce.
