Create delicious loaded potatoes with savory mince, cheese, and creamy mashed peas for a cozy family meal.
Ingredients:
  • 4 (about 200g each) washed potatoes, unpeeled
  • 500g 3 Star Beef Mince
  • 130g mixed vegetables
  • 40.00 ml White Plain Flour
  • 120g pea
  • 2 tabespoons Thickened Cream
  • 60g tasty cheese
Instructions:
  • Preheat the oven to 180C. Arrange the potatoes on a baking tray and prick the skins several times with a fork. Bake for 50 minutes or until they are tender.
  • Heat a non-stick pan over medium heat. Cook the mince, using a wooden spoon to break up lumps, until it changes color, about 5 minutes. Add the vegetables and stir until fully combined.
  • Sprinkle the flour over the mixture and cook for 1 minute until well combined. Then, add the stock and cook while stirring for 2 minutes until the mixture boils and thickens.
  • Boil peas for 2 mins, then drain. Put them back in the pan, add cream, and mash with a fork until nearly smooth.
  • Split the potatoes using a knife, then top them with the mince mixture and cheddar. Bake for 8 minutes, or until the cheddar is melted. Lastly, add a dollop of pea mash on top before serving.
