Baked Pumpkin Spice Doughnuts

Deliciously moist pumpkin spice baked doughnuts made with pumpkin puree for an easy and irresistible treat.
Ingredients:
  • nonstick cooking spray
  • 1.5 cups white sugar
  • 1.5 cups pumpkin puree
  • 3 large eggs
  • 0.5 cup vegetable oil
  • 1.5 teaspoons pumpkin pie spice
  • 1.5 teaspoons salt
  • 1.5 teaspoons baking powder
  • 1.75 cups all-purpose flour
  • 2 tablespoons all-purpose flour
  • 0.25 cup white sugar
  • 1 teaspoon pumpkin pie spice
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease two 6-hole doughnut pans with cooking spray.
  • In a stand mixer bowl, blend sugar, pumpkin puree, eggs, oil, pumpkin pie spice, salt, and baking powder until smooth. Carefully fold in 1 3/4 cups plus 2 tablespoons flour until just mixed. Distribute batter evenly into 2 greased doughnut pans, filling each well 3/4 full.
  • Bake in the preheated oven for 15-18 minutes or until a toothpick inserted in the center comes out clean.
  • After baking the doughnuts, let them cool for approximately 5 minutes. Carefully move the doughnuts to a wire rack, using a butter knife or small rubber spatula to assist in releasing them from the pan, if necessary.
  • Mix sugar and pumpkin pie spice in a large pie plate or in a resealable plastic bag. Lightly sprinkle the warm doughnuts with the sugar mixture. Ensure the doughnuts have slightly firmed up to avoid cracking. Serve warm for the best flavor.
