Baked pumpkin with basil and feta

Roasted pumpkin with fresh basil, perfect as a side or main dish with veggies.
Ingredients:
  • 1/2 pumpkin, seeded, skin on, cut into 2cm wedges
  • 270g jar char-grilled capsicum, drained, chopped
  • 165.00 ml fresh breadcrumbs
  • 100g feta, crumbled
  • 2 tomatoes, seeded, chopped
  • 62.50 ml pine nuts
  • 62.50 ml basil, roughly chopped, plus extra to serve
  • 1 clove garlic, crushed
Instructions:
  • Preheat the oven to 200C and prepare a baking tray by lining it with baking paper.
  • Place pumpkin evenly on the baking tray and delicately brush with oil. Season with your preferred spices. Roast in the oven for 15-20 mins until perfectly tender. Take out of the oven and let it cool for a bit.
  • In a large bowl, toss together capsicum, breadcrumbs, feta, tomatoes, pine nuts, basil, and garlic until evenly combined. Season with salt and pepper to taste.
  • Top each pumpkin wedge evenly with the capsicum mixture. Bake until golden, about 10-15 minutes. Serve as a delightful side dish garnished with extra basil, or as a standalone dish alongside your favorite vegetables.
