Baked snapper with spicy orange-ginger sauce topped with cashews and green onion.
Ingredients:
  • 4 (4 ounce) fillets red snapper
  • 2 mandarin oranges, juiced
  • 2 tablespoons fresh lime juice
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 pinch red pepper flakes
  • 2 teaspoons finely chopped fresh ginger
  • 2 mandarin oranges - peeled and chopped
  • 0.33333334326744 cup unsalted cashews, roughly chopped
  • 2 green onions, finely chopped
Instructions:
  • Preheat the oven to 425°F (225°C) for a perfect bake.
  • Place the snapper fillets in an even layer at the bottom of a lightly greased shallow baking dish. In a medium bowl, combine mandarin orange juice, lime juice, brown sugar, soy sauce, sesame oil, red pepper flakes, ginger, and chopped mandarin oranges. Pour this flavorful mixture over the snapper fillets in the dish.
  • Place the fish in the preheated oven and bake for 12 to 15 minutes until opaque. Serve the fillets on plates, drizzle with sauce, and top with cashews and green onion for extra flavor.
