Baked sweet potatoes with chilli and garlic butter

Sweet potatoes with spicy herb butter drizzle.
Ingredients:
  • 3 small sweet potatoes (kumara)
  • 36.40 gm olive oil
  • 2 onions, halved, thinly sliced
  • 1 small red chilli, seeds removed, finely chopped
  • 20.00 ml finely chopped flat-leaf parsley
  • 125g unsalted butter, softened
Instructions:
  • Preheat the oven to 200°C. Make the herb & chili butter by mixing the ingredients together, shaping them into a log, wrapping it in plastic wrap, and chilling it.
  • Individually encase each potato in foil and bake for 30 minutes. Unveil potatoes and continue baking for an additional 10 minutes until perfectly cooked.
  • Heat oil in a frypan over medium-high heat. Add onions and cook, stirring occasionally, for 20 minutes until crisp and golden.
  • Slice the herb and chili butter into 1cm rounds. Halve each potato lengthwise and place a round of butter and fried onions on top.
