Try this irresistible sticky chicken with tangy coleslaw and baked potatoes for a quick midweek hit!
Ingredients:
  • 10 (about 650g) Baby Coliban (Chat) potatoes (see note)
  • Olive oil spray
  • 80ml (1/3 cup) tomato sauce
  • 55.00 gm sweet chilli sauce
  • 52.50 gm soy sauce
  • 8 (about 500g) chicken tenderloins
  • 120g green cabbage, hard core removed, finely shredded
  • 2 small carrots, peeled, coarsely grated
  • 2 shallots, ends trimmed, thinly sliced
  • 39.60 gm Whole Egg Mayonnaise
  • 42.00 gm fresh lemon juice
Instructions:
  • Preheat the oven to 200°C. Slice the potatoes into 5mm-thick rounds. Lightly grease 2 baking trays with olive oil spray. Spread the potato slices in a single layer on one tray. Give them a light spray of olive oil. Bake for 25 minutes or until tender.
  • In a bowl, mix together tomato sauce, sweet chilli sauce, and soy sauce. Add the chicken and gently mix until coated. Transfer the chicken to the prepared baking tray and bake for 12 minutes, or until fully cooked.
  • In a large bowl, mix together mayonnaise and lemon juice. Add cabbage, carrot, and shallot, tossing until thoroughly combined. Divide potato, chicken, and coleslaw among plates and serve.
