Spicy chicken, creamy feta, and fresh veggies top this healthy pizza for a delicious family dinner.
Ingredients:
  • 600g chopped cauliflower
  • 1 egg, lightly whisked
  • 20g (1/4 cup) finely grated cheddar
  • 27.30 gm extra virgin olive oil
  • 300g Free Range Chicken Breast, thinly sliced
  • 1/2 tsp dried chilli flakes
  • 2 garlic cloves, crushed
  • 1 large zucchini, peeled into ribbons
  • 125g roasted red capsicum (not in oil), sliced
  • 60g feta, crumbled
  • 250g cherry tomatoes, halved
  • 100g baby spinach
  • 20.00 ml white balsamic vinegar
Instructions:
  • Preheat the oven to 220C/200C fan forced. Finely chop the cauliflower in 2 batches using a food processor. Transfer the chopped cauliflower to a microwave-safe dish, cover, and microwave on High for 4 minutes until tender. Let it cool completely, then press with a spoon to remove excess liquid.
  • Prepare 2 pizza trays with baking paper. Mix cauliflower, egg, and cheddar in a large bowl. Divide the mixture in half and place each half onto the trays. Shape into two 20cm circles, 3mm thick. Lightly spray with olive oil. Bake for 15 minutes until the edges turn golden.
  • Heat up fragrant oil in a spacious non-stick pan on high. Introduce chicken, chili, and half of the garlic. Stir and cook until golden, about 2 minutes.
  • In a small bowl, mix together the remaining oil and garlic. Brush the cauliflower bases with the oil mixture. Top with zucchini, capsicum, chicken mixture, feta, and tomato. Bake for 10 minutes until golden, swapping trays halfway through. Serve the pizza with a side of spinach drizzled with balsamic dressing.
