Whip up a delectable gluten-free cauliflower pizza with carrots, feta, onion, and green chili using simple pantry staples.
Ingredients:
  • 2 x 300g pkts Cauliflower Rice
  • 1 Free Range Egg
  • 60g tasty cheese
  • 33.30 gm tomato paste
  • 200g Dutch carrots, trimmed, peeled, quartered lengthways
  • 1 long green chilli, thinly sliced
  • 6 thyme sprigs
  • 100g fetta, crumbled
Instructions:
  • In a microwave-safe bowl, microwave the cauliflower rice covered with plastic wrap on high for 8 minutes until tender. Then transfer to a large heatproof bowl and let it cool for 15 minutes.
  • Preheat the oven to 220C and prepare a large baking tray lined with baking paper.
  • Mix the egg and cheddar with the cauliflower until well combined. Season with your favorite spices. Spread the mixture onto the tray, shaping it into a 16cm x 35cm oval. Bake until golden brown, about 15 minutes.
  • Evenly spread tomato paste over the cauliflower pizza base, then layer with carrot, onion, chili, thyme, and feta. Bake for 15 minutes, or until the carrot is tender and the feta is golden. Serve by cutting into slices.
