Falafel, fetta and rice salad recipe

Enjoy a quick and delicious summer salad bursting with vibrant flavors.
Ingredients:
  • 450g microwavable brown rice
  • 40g currants
  • 60ml lemon juice
  • 225g pkt falafel balls
  • 2 large carrots, peeled, cut into long matchsticks
  • 60g pkt Baby Rocket
  • 82.50 ml shredded mint
  • 36.40 gm extra virgin olive oil
  • 200g pkt Danish Fetta, crumbled
Instructions:
  • Prepare the rice according to the package instructions, then transfer it to a spacious heatproof bowl. Let it sit and cool slightly, stirring occasionally.
  • In a small bowl, mix the currants and lemon juice together. Let it sit for 5 minutes to soak.
  • Prepare the falafel according to the instructions on the packet, then crumble into pieces.
  • Combine the currant mixture with the rice in the bowl containing the carrot, rocket, and mint. Drizzle with oil, season generously, and toss everything together until well combined.
  • Portion out the rice mixture onto individual plates and garnish with falafel and feta cheese.
