Falafel and avocado salad with charred lime dressing

Irresistible falafel salad with feta, avocado, and hummus base. A must-try!
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 225g packet falafel, roughly torn (see notes)
  • 200g tub hummus
  • 1 baby cos, leaves separated
  • 1 witlof, finely shredded
  • 1 avocado, sliced
  • 80g fetta, crumbled
  • 62.50 ml chopped fresh flat-leaf parsley leaves
  • 3 limes, halved
  • 75.08 gm light-flavoured extra virgin olive oil
  • 27.00 gm maple syrup
  • 1 tsp dried oregano
Instructions:
  • In a non-stick frying pan over medium heat, heat oil. Add falafel and cook for 5 minutes, stirring occasionally, until golden and crisp. Let cool before serving.
  • For the Charred Lime Dressing, start by heating a small non-stick frying pan over medium heat. Place the limes, cut-side down, in the pan and cook for 10 minutes until charred and caramelized. Set them aside for 10 minutes to cool. After that, juice the limes and combine the juice with oil, maple syrup, oregano, salt, and pepper in a jug. Whisk everything together until well combined.
  • On a serving plate, generously spread hummus. Arrange cos, witlof, avocado, fetta, falafel, and parsley on top. Finish with a drizzle of dressing. Enjoy!
