Mediterranean-inspired falafel cobb salad with avocado, feta, eggs, and bacon.
Ingredients:
  • 1.25 cups water
  • 1 (6 ounce) package dry falafel mix
  • 2 cups vegetable oil for frying
  • 0.5 cup sour cream
  • 0.25 cup milk
  • 0.25 cup diced cucumber
  • 1 teaspoon minced fresh parsley
  • 1 (10 ounce) bag mixed salad greens
  • 2 tomatoes, diced
  • 1 avocado, diced
  • 8 slices cooked bacon, crumbled
  • 3 hard-boiled eggs, diced
  • 0.75 cup feta cheese
Instructions:
  • Combine water and falafel mix in a bowl and allow to rest for 10 minutes. Shape the mixture into 12 patties, each 1/2 inch thick.
  • Prepare the deep-fryer or large saucepan by heating oil to 375 degrees F (190 degrees C).
  • Fry falafel patties in hot oil in batches until crispy and golden brown, around 3 to 5 minutes. Drain on paper towels, season with salt, and let cool to room temperature. Break into pieces before serving.
  • Combine sour cream, milk, refreshing cucumber, aromatic parsley, and a dash of salt in a bowl. Whisk until the dressing is velvety and creamy. Chill in the refrigerator.
  • Place a bed of fresh greens on serving plates. Artfully line up tomatoes, avocado, bacon, eggs, feta cheese, and falafel in rows over the greens. Finish by elegantly drizzling dressing over each salad.
