Falafel kale wraps

Try these delicious and nutritious kale wraps for a satisfying meal without the carbs.
Ingredients:
  • 40.00 ml plain yoghurt
  • 24.00 gm tahini
  • 1/2 tsp ground turmeric
  • Pinch of cayenne pepper
  • 60ml (1/4 cup) fresh lemon juice
  • 6 large Tuscan kale (cavolo nero) leaves, ends trimmed
  • 12 ready-made falafels
  • Carrot, cut into matchsticks
  • Radish, cut into matchsticks
  • Red onion, thinly sliced
  • Sesame seeds, toasted, to serve
Instructions:
  • Combine the yogurt, tahini, turmeric, and cayenne pepper in a bowl. Slowly whisk in the lemon juice, then season to taste.
  • Place the kale leaves in a large heatproof bowl and pour boiling water over them. Let sit for 30 seconds. Then, transfer the kale to a bowl of iced water to refresh. Finally, pat dry with a kitchen towel.
  • 1. Warm falafels according to package instructions. 2. Arrange kale leaves and top with carrot, radish, and onion. 3. Place 2 falafels on each pile, slightly pressing down. 4. Drizzle with yogurt sauce and sprinkle sesame seeds. 5. Roll up to enclose and enjoy.
