Whip up a quick and easy Middle Eastern dish with just a few basic ingredients.
Ingredients:
  • 1 x 200g pkt falafel mix
  • 60ml (1/4 cup) olive oil
  • 4 rounds Greek pita bread (Buttercup brand)
  • 1 large green zucchini, ends trimmed, coarsely grated
  • 1 x 200g punnet grape tomatoes, halved
  • 1 x 250g container hummus
  • 82.50 ml loosely packed fresh continental parsley leaves
Instructions:
  • Prepare the falafel mix according to the package instructions. Form the mixture into 8 equal portions and shape them into 5cm patties. In a large non-stick frying pan, heat 2 tablespoons of oil over high heat. Cook the patties for 4-5 minutes on each side until they turn golden brown. Transfer the patties to a plate and cover with foil to keep them warm.
  • 1. Heat the remaining oil in the frying pan over high heat until sizzling. Fry the pita bread for 1 minute on each side until beautifully golden. Arrange the crispy pita on serving plates then layer with zucchini, tomato, and flavorful falafel. Finish with a generous dollop of creamy hummus and a sprinkle of fresh parsley leaves.
