Vibrant California tzatziki: perfect for sandwiches, falafel, and veggie dip. Also delicious with Indian dishes. Swap sour cream for yogurt or omit for vegan option.
Ingredients:
  • 1 large avocado, peeled and pitted
  • 2 cloves garlic, minced
  • 1 lemons, juiced
  • 0.25 cup sour cream
  • 0.5 cup chopped seeded cucumber
  • 0.5 teaspoon red pepper flakes, or to taste
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon chopped fresh mint
Instructions:
  • Combine ripe avocado, garlic, fresh lemon juice, sour cream, and cucumber in a bowl. Mash together until smooth, adding a dash of red pepper flakes, cilantro, mint, salt, and pepper. For a creamier texture, consider using a food processor if needed. Chill in the fridge for 1 hour before enjoying.
