Brighten your morning with a refreshing bruschetta.
Ingredients:
  • 1 large firm ripe avocado, stone removed, peeled, diced
  • 250g cherry tomatoes, halved
  • 62.50 ml fresh basil leaves, torn
  • 9.20 gm olive oil
  • 5.30 gm lemon juice
  • 4 large slices sourdough bread
  • Lemon wedges, to serve
Instructions:
  • Combine avocado, tomatoes, basil, olive oil, and lemon juice in a medium bowl. Season with sea salt and freshly ground black pepper, then gently mix together.
  • Toast or grill the bread until it reaches a perfect golden hue. Top each slice of bread with ¼ of the decadent avocado mixture. Finish off with a wedge of zesty lemon for an ultimate flavor burst.
