Elevate breakfast with a quick, fruity Italian bruschetta in 15 minutes!
Ingredients:
  • 1 cup finely chopped fresh pineapple
  • 1/2 cup finely chopped fresh strawberries (6 large)
  • 2 kiwifruit, peeled, finely chopped
  • 1 tablespoon grated orange peel
  • 3 to 4 tablespoons fresh orange juice
  • 1 bakery fruit-and-nut loaf (16 oz), cut into 14 (1/2 inch thick) diagonal slices
  • 7 teaspoons butter or margarine, softened
  • 7 teaspoons cinnamon-sugar
Instructions:
  • Preheat the broiler. Combine pineapple, strawberries, kiwifruit, orange zest, and orange juice in a small bowl.
  • Spread 1 1/2 teaspoons of butter on each bread slice. Arrange them on an ungreased cookie sheet and sprinkle 1 1/2 teaspoons of cinnamon-sugar on each slice.
  • Place under the broiler, 4 to 6 inches from the heat, for 1 to 2 minutes, rotating the pan halfway through if necessary. Spread the fruit mixture evenly on the toasted bread.
