Mixed fruit bread rolls

Delicious fruity breakfast rolls.
Ingredients:
  • 240g (1 1/2 cups) wholemeal flour
  • 225g (1 1/2 cups) plain flour
  • 20.00 ml (14g/2 sachets) dried yeast
  • 55g (1/4 cup) caster sugar
  • 130g (3/4 cup) dried mixed fruit
  • 40g (1/4 cup) pepitas (pumpkin seed kernels)
  • 40g (1/4 cup) sunflower seeds
  • 1.25 gm ground cinnamon
  • 1.25 gm mixed spice
  • Pinch of ground cloves
  • 375ml (1 1/2 cups) lukewarm water
  • 60g butter, melted, cooled
  • Plain flour, extra, to dust
  • Butter, to serve
Instructions:
  • In a large glass bowl, combine flours, yeast, sugar, dried fruit, pepitas, sunflower seeds, cinnamon, mixed spice, and cloves. Create a well in the center and pour in water and melted butter. Stir with a wooden spoon, then use your hands to mix until a soft dough comes together.
  • Transfer the dough to a floured surface and knead for 10 minutes until it becomes smooth and elastic. Form it into a ball and place it in a clean glass bowl. Sprinkle with a bit of water, cover with a damp towel, and let it rise in a warm, draft-free spot for 1 1/2 hours or until doubled in size.
  • Using your fist, gently deflate the center of the dough. Transfer the dough to a lightly floured surface and knead for 5 minutes until it has regained its original size.
  • Divide the dough into 10 portions, shape each into a ball, and arrange them on 2 baking trays with a 3cm gap between each. Cover with damp tea towels and allow to rest in a warm, draft-free area until nearly doubled in size, for about 30 minutes.
  • Preheat the oven to 200°C. Lightly moisten the rolls with water. Bake for 20 minutes or until they are golden and sound hollow when tapped underneath. Let them cool on a wire rack, then enjoy with butter.
