Nutrient-packed trail sandwiches with cream cheese spread mixed with raisins, shredded carrot, and trail mix on wheat bread. Customize with sunflower seeds or fruit trail mix for variety. Great for on-the-go fuel!
Ingredients:
  • 1 (8 ounce) package cream cheese, room temperature
  • 1 tablespoon lemon juice
  • 1 teaspoon finely grated lemon zest
  • 1 carrot, peeled and grated
  • 0.33333334326744 cup coarsely chopped trail mix
  • 8 slices whole wheat bread
Instructions:
  • Combine cream cheese with lemon juice, zest, raisins, shredded carrot, and chopped trail mix in a bowl until smooth. Spread the mixture between 2 slices of bread, and pack up for the trail.
