Mixed berries on sugar bread with mascarpone

Ingredients:
  • 250g (1 punnet) strawberries, washed, hulled, halved lengthways
  • 125g raspberries
  • 20.00 gm warm water
  • 80g (1/3 cup) caster sugar
  • 1 baguette (French stick)
  • 25g butter, at room temperature
  • 125g mascarpone (Fresco brand)
Instructions:
  • In a medium bowl, mix the strawberries and raspberries together. Drizzle with water and sprinkle with 1 tablespoon of sugar. Gently toss until fully combined.
  • Spread butter on one side of each 2cm-thick baguette slice, then press into the remaining sugar on a large plate to coat. Repeat with the other side of the bread slices.
  • Preheat a generous non-stick frying pan over high heat. Place the bread slices in the pan and cook for 1 minute per side, or until they turn a beautiful golden brown.
  • Place a slice of sugar bread on a plate, spoon the berries with syrup on top, and finish with a dollop of mascarpone.
