Elevate your breakfast with this decadent twist on a classic favorite.
Ingredients:
  • 300g self-raising flour
  • 2.00 gm baking powder
  • 40.00 gm caster sugar
  • 1 egg
  • 375ml buttermilk
  • 125ml milk
  • 500g fresh mixed berries
  • 1 vanilla bean, split
  • 40.00 gm caster sugar, extra
  • 40g butter
  • Maple syrup, to serve
Instructions:
  • In a medium bowl, sift together the flour, baking powder, and sugar, then create a well in the center. In a separate jug, whisk together the egg, buttermilk, and milk. Gradually add this mixture to the flour, whisking until a smooth batter forms. Cover with plastic wrap and let rest for 30 minutes.
  • In a large bowl, mix together the berries, vanilla bean, and sugar, gently tossing to combine. Let it sit for 1 hour to macerate.
  • Melting 1 teaspoon of butter in a small, shallow non-stick frying pan over medium-high heat until sizzling. Pour in about 1/4 cup of batter to make a 10cm hotcake. Lower heat to medium and cook for 2 minutes until bubbles appear on the surface and the bottom is golden. Flip and cook for an additional minute until done.
  • Transfer the hotcake to a plate and cover with foil to keep warm. Repeat the process with the remaining batter, making sure to grease the pan before each batch to yield a total of 8 hotcakes.
  • Serve the pancakes on individual plates and garnish with fresh berries before generously drizzling with maple syrup. Enjoy right away.
