Elevate breakfast with fluffy banana oat hotcakes.
Ingredients:
  • 225.00 gm self-raising flour
  • 4.00 gm baking powder
  • 100.00 gm quick-cooking oats
  • 20.00 gm caster sugar
  • 2 eggs
  • 321.88 gm milk
  • 60g butter, melted and cooled
  • 4.40 gm vanilla essence
  • 2 mall bananas, mashed
  • Cold butter, for cooking
  • Vanilla yoghurt, to serve
  • Maple syrup, to serve
Instructions:
  • In a spacious bowl, sieve the flour and baking powder. Add in the oats and sugar, then create a well in the middle.
  • Combine eggs, milk, melted butter, and vanilla essence in a jug. Pour mixture onto the dry ingredients and fold in mashed banana using a rubber spatula until just combined.
  • Preheat a large frying pan over medium-low heat. Grease the pan with a thin layer of cold butter using paper towel. Pour 1/4 cup of batter into the pan, leaving space between each hotcake. Cook until bubbles form on the surface and the bottom is golden brown, about 3 minutes. Flip using a spatula and cook for an additional 2 minutes.
  • Enjoy your hotcakes freshly made, served warm with a dollop of yogurt and a drizzle of maple syrup.
