Microwave banana baked oats - quick, filling breakfast for busy college students.
Ingredients:
  • 1 cup rolled oats, or as needed
  • 1 medium banana
  • 1.5 teaspoons ground cinnamon
  • 0.5 teaspoon vanilla extract
  • 0.5 teaspoon baking soda
Instructions:
  • Blend 1 cup oats in a blender until you achieve a fine flour-like consistency.
  • Smash a ripe banana in a glass or microwave-safe dish. Add in ground cinnamon and a dash of vanilla extract. Mix in the blended oats and a pinch of baking soda, stirring until well combined. Pour in milk gradually, stirring to achieve a smooth mixture.
  • Microwave for 2 minutes until firm, then let cool before enjoying.
